Gougeres
Ingredients

8 Tablespoons (4 Ounces) Unsalted Butter, cut into small cubes, chilled

Pinch of Salt

1 Cup Water

1 Cup, minus 1 Tablespoon AP Flour

4 Large Eggs

3⁄4 Cup Gruyere, grated
Directions
Preheat Oven to 400 degrees
Combine in a pot Butter, Salt, Water. Bring to a boil, remove from heat
Add Flour all at once and beat vigorously until mixture comes away from the sides of the pan
Return to Low Heat, beat for 1 minute
Place mixture in a Kitchen Aide with Paddle attachment
Gradually add Eggs and 1⁄2 Cup of Gruyere while on Med/High Speed
Transfer mixture to a Pastry Bag with tip. Pipe out on parchment lined sheet pan, small mounds
Sprinkle with remaining grated cheese, maybe adding a bit of grated Parmigianno Reggiano
Bake for 20-25 minutes
