The thing about March is that it is both an incredibly busy month in many ways and also kind of not in others.
It is the time for Spring Breaks.

That subtle hint of longer days and warmer evenings tinted by violet hues. We can see the sunset over the Hudson River if we look out, leaning to the right a pinch, straight down North Moore.

And the most important holiday…Chef’s birthday.

When Chip was growing up in Greenville, North Carolina, he lived next to his Grandparents.
Grandma Nan would make him a pineapple layer cake for his celebration. Boxed cake mix, canned pineapple, still the warmest memory for the boy inside the man.

He now each year for a month features his version, kicked up a notch, and it is the most fluffy delicious concoction. We all get to enjoy the fruits of his labor, even for his own birthday.

We also each year have the pleasure of seeing an opera at the Metropolitan Opera House, thanks to our dear friend, Ann Ziff.
This year, the sparse and beautiful staging of Madama Butterfly…Chip did not know the entire story so emotions were the theme of the night.
Staging and costuming, performances…All magnificent. An escape from our daily routine.

And this is our continued vision for what we try to do, in our little corner of New York. Like Calgon back in the day, take you away.
Enter that front door, settle in to your table, put away that phone, and enjoy. It is our absolute joy to see you unwind and forget the time passing by.
We so appreciate you. In a sea of amazing places that you would choose to grace ours.

I am just now stepping back into trying new Wines.
So much to consider, makes one dizzy.

I first wait for the menu to change, and let the games begin.
Spring is dragging its feet so all of the goodies are going to run behind a bit.
But, what is exciting… Wild Alaskan King Salmon!
Hand rolled gnocchi, salsify, beurre Rouge.
A duo of White and Red…Pinot Noir from East Sussex, England! for the composed bite.
With just the Salmon on your fork, Alsace Pinot Gris. Or Condrieu.

Fresh Chevre soon. Hello Souffle, twice baked, much loved by so many.
Chenin Blanc, just the right one, slightly off dry.

I am always reminded that though it has been a little tough these past few months that we are oh so fortunate to have our Oasis in Tribeca to welcome you.
There are little hurricanes all around us and sometimes it can send us down the hill a bit.
But, back up we are transported by you. Your genuine happy factor once your evening is at the end only allows us to feel nourished.
