(Tomato Jam)

Ingredients

      • 3 cups Onion, diced
      • 1 cup Olive Oil
      • 1 lb. Plum Tomatoes, peeled, seeded, coarse Puree
      • 1⁄2 tsp. Garlic, minced
      • Vinegar, Salt, Pepper to taste

Directions

Heat Oil in a large Sauce Pot

Add Onions, bring up to a simmer, then reduce heat to Very Low! And cook for 2 1⁄2 hours

Add Tomatoes and bring back up to a simmer

Then again, reduce heat to Very Low! And cook for 2 1⁄2 hours

On the last hour of cooking, add the Garlic

Season to taste with Vinegar/Salt/Pepper

This is a wonderful way to preserve the end of our Summer Tomatoes…feel free to substitute ones from your local market that have been particularly delicious, but they do want to be meaty!

Serve on Sandwiches, Cheese Boards, on Saltines with an Oyster??
