One thing is for certain…July was HOT! And, we had the pleasure of the main AC deciding to say au revoir right in the middle of the NYC heatwave weekend.
No amount of fans could remedy that, even if I had hired beautiful individuals to stand table side with oversized woven fans and frosty glasses of Champagne. But now we are gloriously cool again, though still peeking longingly forward for those amazing Fall days.

The Rothschild’s farm, Spruce Ridge, is providing Chip and embarrassment of bounty. And absolutely everything they bring tastes like the best version of that item.

Heirloom tomatoes that have inspired their own salad, with lettuces, also from the farm, ditto on cucumbers, a miniature version of our blue cheese souffle, chunky lardons, Bleu cheese vinaigrette, croutons. I am pondering on the wine for that special combined bite…maybe Vernaccia? Jurancon Sec? Arneis? I will have to just try all 3…I work soooo hard.
Beautiful eggplants, pattypan squash. Sweet sweet silver corn.
Chip will do a seared Scallop with the corn and a little anchovy hazelnut aillade. A Chardonnay, La Fleur de Buoard, made over in Bordeaux will be delish, or a Jura blend?
The Chicken a la Eastern Carolina barbeque has returned, with a fresh summer sausage, crispy red corn grits from Marsh Hen Mills, local garlicky greens. Trousseau, slightly chilled, yes, please!

Chip was feeling Americanna nostalgic on his menu.
An homage to the style of Alice Waters with his fresh seared tenderloin of beef, with persillade, roasted tomato, local Romano beans with Tropeo onions. We splurged on the pairing to the guest with Mayacamas Cabernet Sauvignon 2018. And then a craving for the Shortcake Biscuit with crystallized ginger, peaches, blackberries, blueberries, whipped cream, Larry Forgione all the way!
