food chilling on our porch grill
I can tell that we are once again stepping into the “lifestyle” that we know and love so well when I start losing sleep over “lighting, chairs, staffing, wine, paint colors, flowers, rinse and repeat!” The word is officially out and although it is the time of year in our fair city where our guests escape to the wonderful beach and country homes that keeps them enjoying the bounty of summer, we are still humbled by the amount of care and curiosity that keeps them checking in on us to monitor the progress. We are moving along with some cosmetic changes and Chip is having fun experimenting in a kitchen so spacious that I have trouble finding him when I pop in.
A couple of construction chic dinners have been a fun and adventurous way to entertain those daring enough to put up with plaster dust and electrical wires. A graduation evening for our friend Owen, the budding filmmaker. A celebration of friends cooking in the kitchen with Chip…Larry Sprung throwing down with his version of Shrimp n’Grits, Stacy doing an inspired evening of Puerto Rican Pernil, shrimp again with chiles and paprika, a marvelous sugar snap pea salad with ricotta salata and lemon, a Sherry forward cocktail provided by Andrew which was delicious!! And our very awesome and supportive wine peeps doing a byob evening with Chip presenting Soft Shell Crabs, Blanquette de Veau, Market Greens with roasted beets and horseradish beet vinaigrette, Pavlova to end the meal.

The walls have been brought in to allow the space to be more “Tina” size, chairs are on the way, business cards designed…lighting, oh my, what a deep dive down the rabbit hole I went to select lighting. Chip finally stopped the insanity by stepping in to narrow it down to final selections. Too many pretty things, I could just keep filling up many a restaurant with lights and more lights!! When we took apart the existing coat closet to move it further in we uncovered a delicious amuse bouche of a different sort! We decided to keep her posted behind the new drywall instead of removing and hope that someday someone else gets to have the visual surprise. I admit it has made me walk a bit more…though I cannot do anything about the age part.

I am just now beginning the adventure of thinking about a wine list, mini mini to start, I mentioned chairs, lighting, flowers, right?? So with little by little we will add to selections to be more complete by the Fall Season. For now Rose, Champagnes, light Reds, Refreshing Whites…I already mentioned Rose? You all know me.

We are so excited to be able to see all of you. The spirit of the guest is really the magic in the room. Though we may create the 3 ring Circus one calls a restaurant it is the joy of caring and feeding those that embrace our vision that is the final touch, the real secret ingredient.

See you soon,

–Chip and Tina
